Gluten Fee Almond-Coconut-Blueberry Energy Bars

  • 1 cup toasted slivered almonds 
  • 1 cup toasted, sea salted pecans  
  • 1/2 cup organic unsweetened shredded coconut
  • 1/2 cup raw almond butter
  • 1/2 cup organic coconut oil  
  • 1/2 cup almond flour/ meal
  • 2 tsp pure organic Tahitian vanilla extract
  • Options Below
  • 1 cup dried unsweetened blueberries or cherries for a variety of taste

Put the coconut in a skillet, turn the heat to medium, stir lightly until golden brown. Don’t walk away. It cooks fast. Pull out of pan and put into large mixing bowl.
 
Put the almonds and pecans in the Vitamix until chopped,. Add to mixing bowl.
In a small sauce pan, melt the almond butter and  organic coconut oil, stir until thoroughly blended. Pour into mixing bowl.
 
Add  almond flour, Protein/Superfoods, vanilla and blueberries to mixing bowl and stir until fully mixed.
 
Pour mixture in an 8×8 baking pan, and flatten out with a spatula.
 
Put in freezer for an hour or so. Then remove, cut into 1″ size pieces,  or how ever you want to make them…cover and store. Keep them in the freezer so they stay firm.
